YenneBendekayi

Yenne Bendekayi:

My MIL is in Vizag for 15 days along with my FIL and my two sons. As my FIL had some urgent work he came to Bangalore for two days and this was the first time I had to do something for him in my MIL absence. I wanted to make use of this opportunity but my SIL told I will do something for his lunch. So two consecutive days she prepared the curries and first day she gave us for dinner also. I had to prepare only rice.

Second day, which was day before yesterday, she invited all of us to her home for dinner. I knew she would have definitely done sambar, rasam, poriyal(palya). So I jumped upon a recipe which could be done within 30 mins, it was "yenne bendekayi", english word "stuffed lady's finger". It is also called as Bhindi Masala.

Ingredients:

Big Onion  - 1
Ginger - 2 inch
Red Chillies (Guntur) (for Spicyness) - 3
Red Chillies (Byadige) (for color) - 2
Tomato - 1
Lady's Finger - 12 to 14
Coriander Leaves - one handful
Salt - 1 tbsp
Jaggery - 1 tbsp
Tamarind Pulp - 1 tsp
Tamarind - 1 lemon size

Method:
Blend all the ingredients
First add all the ingredients and add coriander leaves on top so that it doesn't get stuck. On top of coriander add tamarind.

Using little water grind it to a medium paste (actually it should be thick one)

Slit the lady's finger into half (but not into two) as shown in the below figure

"Masala ni bendekayilo kuru" - means put the masala inside the lady's finger
Heat the cooker, put little oil and wait till it becomes hot
Once hot add mustard seeds once it splutters add curry leaves

Then put the stuffed lady's fingers into it and fry for some time very slowly

Then pour the remaining masala into the same
Bhindi Masala is ready to serve
