Spinach-Potato Sandwich - Blog Hop Wednesday – ver 2.0 Series #15:

I feel great to participate in Blog Hop Wednesday ver 2.0 15th Series and this time I was paired with Roshan of Roshan Cucina


Blog Hop Wednesday is a monthly event which happens on every 2nd Wednesday of the month. Participant would be paired with one more participant and we need to select, cook and link it to the event.

Roshan started blogging since June 2010 and as of today she has got 136 varieties of recipes. She cooks mainly from Kerala, which is also called as God’s own country. In Kerala dishes mainly you will see milk, coconut either in sweet or in savory dishes. I selected out a sandwich dish which made my child and his friends, my sister-in-law and my neighbor to say great after eating the sandwich. This sandwich is called as Spinach-Potato Sandwich.

Ingredients:
Spinach – 20 leaves (I used palak)
Potato – 1 medium
Onion – 1 medium
Milk – ½ cup
Oil – 2 tbsp
All purpose Flour – 1 tbsp
Salt to taste
Pepper Powder – 2 tsp
Bread Slices – 10









Method:
Cut potatoes into small cubes and leave it in hot oil for 7 minutes to turn them crispy.




Remove the cubes and add chopped onion pieces and washed spinach and fry them till onion turns translucent and spinach becomes soft
Add all purpose flour to the above mixture and still well till the raw smell goes
Add milk to the mixture and mix it well, a creamy consistency is formed


 
Finally add salt, pepper powder mix well and after a minute add crispy potato cubes and stir it well

 













Take 2 bread slices put ghee on both sides and slightly roast it using frying pan or dosa tawa
Take one roasted bread slice and spread the spinach potato mixture on top of it


Place other roasted bread slice on top of this one
Prepare the remaining bread slices in the same way
Squeeze tomato ketchup on it (optional as children asked for it) and serve it
