Spinach-Potato Sandwich - Blog Hop Wednesday – ver 2.0 Series #15:

I feel great to participate in Blog Hop Wednesday ver 2.0 15th Series and this time I was paired with Roshan of Roshan Cucina


Blog Hop Wednesday is a monthly event which happens on every 2nd Wednesday of the month. Participant would be paired with one more participant and we need to select, cook and link it to the event.

Roshan started blogging since June 2010 and as of today she has got 136 varieties of recipes. She cooks mainly from Kerala, which is also called as God’s own country. In Kerala dishes mainly you will see milk, coconut either in sweet or in savory dishes. I selected out a sandwich dish which made my child and his friends, my sister-in-law and my neighbor to say great after eating the sandwich. This sandwich is called as Spinach-Potato Sandwich.

Ingredients:
Spinach – 20 leaves (I used palak)
Potato – 1 medium
Onion – 1 medium
Milk – ½ cup
Oil – 2 tbsp
All purpose Flour – 1 tbsp
Salt to taste
Pepper Powder – 2 tsp
Bread Slices – 10









Method:
Cut potatoes into small cubes and leave it in hot oil for 7 minutes to turn them crispy.




Remove the cubes and add chopped onion pieces and washed spinach and fry them till onion turns translucent and spinach becomes soft
Add all purpose flour to the above mixture and still well till the raw smell goes
Add milk to the mixture and mix it well, a creamy consistency is formed


 
Finally add salt, pepper powder mix well and after a minute add crispy potato cubes and stir it well

 













Take 2 bread slices put ghee on both sides and slightly roast it using frying pan or dosa tawa
Take one roasted bread slice and spread the spinach potato mixture on top of it


Place other roasted bread slice on top of this one
Prepare the remaining bread slices in the same way
Squeeze tomato ketchup on it (optional as children asked for it) and serve it

This post is dedicated to my mom, mother-in-law, my siblings, my cousin and to all other women blog readers.

God created Man by a dust but, He created woman from a rib of man. The below poem answers why:

My Food Commenter
Women is compared to pink color and that's the reason I have put up mixture of pink, red and maroon. As different shades of pink is not visible clearly.

To celebrate this occasion I am presenting a simple food - pazham nurruku (kerala food).

Cousin - Star Jan'12

Ingredients:
Banana - 2
Sugar Syrup - 1/2 cup
Butter / Ghee - 1 tbsp

Method:
Chop banana of 1" inch with its skin
Steam it for 2 minutes in oven (till its half done)
Pour 8 to 10 sugar sachets (small) in little water
Put it in oven and allow it to get sugar syrup
After 8 minutes I got sugar syrup
Immerse steamed and chopped bananas into this sugar syrup and keep it in oven for 2 minutes
Remove it from oven mix it with butter and put it again in oven for 2 minutes
Allow it to cool

5 Star Chocolate (home made)

5 Star Chocolate (home made):

I brought a condensed milk, 15 days back and was not sure what can I make out from that. I turned around and saw they had given very interesting recipe called "Chocolate Walnut" and the key thing was it could be done in 10 minutes. Last Saturday afternoon I planned to do this. But I did not have walnuts :( so thought of using cashewnuts instead of it.

I still had Icing Sugar which I brought it about a month's back in a good condition.

Ingredients:
Dark Chocolate - 4 pieces
Milk - 2 tsp (optional because dark chocolate will have little bitter taste instead you can use milk chocolate)
Butter - 1  tsp
Icing Sugar -50 gms
Condensed Milk (Milkmaid) - 1 tin
Cashewnuts (roasted) - 6 (made into quarters)
 
Method:
Melt dark chocolate, milk and butter in a kadai.
Add icing sugar to the above melted mixture
Add condensed milk little by little by keeping completely stirring
Add the roasted cashewnuts and keep stirring still you get a chocolate mass
Once done pour it into the plate / vessel which has a butter paper on it
Allow it to dry for sometime and keep it in deep freezer
Remove it after 3 to 4 hours or once it is completely dried and serve it to the kids


Comments:
After it was dried I checked the quantity the chocolate resembled to a 5 star means when you start eating 5 star, in between you can feel the chocolate pulls.





But after eating this chocolate my sister-in-law commented that the taste was like Diary Silk.

Star - January 2012

January 2012:

This charming, young, dynamic lady is called as Saraswathi Iyer who was born and brought up in Bangalore currently settled in Singapore with her lovely family. Today she is a mom of 3.5 years old son.

Saraswathi was my first inspiration to write my blog. I subscribed to her blog  - simplysara07 thro' email and peeped each post to learn how we do cooking, which I used to do only at times after marriage for first few years. 

She has been blogging since 2007 but passively and became active from 2008, i guess I am sure of the dates. Currently, she manages this blog with her wide range of vegetarian traditional Indian and International cooking with Baking recipes too. She has written more than 400 posts in her blog. While her other blog Sara's Events and Roundups is about events run on her blogs and other blogs (who intimates her)

It gives me a great pleasure to thank her as Star of my blog for this month Jan 2012, hence passing this lovely award to her. No rules set up to the award.
